How It's Made

Four steps, one still, and no part of it automated.

Grain & Mash

Rye, corn, and malted barley, mashed in small batches the way the founder's ledger still describes it.

Copper Pot Still

One still, hand-fired, running slower than the column stills three counties over.

Char & Fill

New oak, charred to the cooper's own spec, filled the same afternoon the spirit comes off the still.

Rest In The Rick House

No climate control. The Ontario winters do the work the founder always insisted they should.

A Line For The Label

Every bottle can carry a second line — engraved onto the label plate, not printed. A name, a date, a place that matters to whoever's opening it.
